This workshop will focus primarily on seaweeds and we will be identifying and gathering a selection of around ten or so tasty, edible seaweeds. We will be exploring the rocks and pools at Cwm Tydu at a very low tide, then spend time tasting the best selection, looking at ways of preserving and using them and eat some delicious foods prepared with seaweeds. Hips and Haws - Preserving Autumn Fruits without refined sugar

Saturday 23rd September 10.30am - 3.30pm

Melfed, High Street, Cardigan

In this workshop we will be walking around the wilder side of Cardigan, gathering and identifying a selection of seasonal wild fruits, as well as looking at the other Autumnal wild foods around at this time of year. We will take our pickings back to the kitchen at Melfed, my workshop and use them to make some delicious preserves to take home. Traditional methods often use a lot of sugar, we will be using alternatives such as maple syrup, concentrated apple juice, local honey, vinegar and drying. Whilst our preserves are bubbling away we will break for a rustic, foraged lunch prepared by me.

Sewing a unique gathering apron, going on a seaweed foraging adventure and enjoying wild food feasts.

Join us at Jolette's inspiring studio in Goodwick where we will be making beautiful unique gathering aprons using organic cotton and up cycled materials.

We will break for a delicious lunch and spend the afternoon finishing off our aprons ready for the next days foraging outing.

All materials, sewing machines and equipment provided.

Day 2

Seaweed

15:00-21:30

We will meet in surrounding countryside and start our walk down a wooded river valley to a secret beach. At low tide we will explore a variety of edible seaweeds, identifying and gathering as we go. We will focus on sustainable harvesting, preparation and identification. We'll then head back to Jolette's studio for cocktails, canapés and a three course seaweed inspired foraged feast.

Places are limited to 6 people on the Friday and 8 on the Saturday so booking is essential

Join me for an inspiring event celebrating the edible blooms of the Elder tree. Take an early evening walk through the 'wilder' side of Cardigan, picking enough blossom to take back to my kitchen. Here the group will learn useful facts about traditional and modern uses of elderflower and how to responsibly harvest them. Join a group activity making a batch of elderflower champagne using your harvest and sample some other delicious homemade, foraged elderflower treats.

Wild Pickings will be attending this lovely weekend in set in the picturesque village of Lawrenny, on the edge of the Cleddau estuary.

Estuaries are particularly delicious and edible environments with a wide selection of tasty wild plants. Over the weekend I will be running a series of workshops, exploring the surrounding area and gathering some of the edible delights that grow there. Together we will be using them to make foraged treats. I'll also have a display area with an array of seasonal wild foods and lots of ideas for how to use them.

Spring is a time of abundance and new life. Of fresh, green leaves, edible blooms and the most tender, tasty and nutritious wild food. Join me for a whole day gathering, eating and identifying the most delicious seasonal wild plants. We will explore hedgerow, meadow, river side and beach.

The day will start from my workshop, from there we will explore the wilder side of Cardigan, with a gentle walk, followed by a hearty foraged lunch.

We will spend the afternoon at Poppit, looking at the tasty plants the estuary and sea shore has to offer.

Food will all be plant based. Refreshments and lunch are included.

Wild Fermentation

Saturday May 20th 10 - 3

Melfed, The Arcade, Cardigan

Fermenting foods is a very old method of food preservation that also enhances the nutrient content. The action of the bacteria makes the minerals in cultured foods more readily available to the body. The bacteria also produce vitamins and enzymes that are beneficial for digestion.

In this workshop we will start the day with a forage around the hedgerows, meadows, lanes and river side of Cardigan. We will gather a selection of the tastiest wild greens and blossoms to take back to my workshop where we will use them to make a lacto-fermented wild 'kraut' and the blossoms to flavour water kefir, a tasty fermented drink.

Over lunch we will sample a selection of foraged ferments and pickles, with local organic sourdough bread and water kefir. (Please bring whatever additional eats you would like that compliment lunch)

We will finish off the day bottling up the kraut and there will be a jar of prepared wild kraut to take home as well as a bottle of water kefir, complete with starter.

During the course of the day there will be plenty of opportunity to share knowledge and tips on fermenting and we will discuss the health benefits of this method, which is teeming with beneficial lactobacillus bacteria.

A full day of foraging, eating and preserving in the beautiful grounds of One Cat Farm. We will start the day foraging around the meadows and hedgerows, looking at the edible bounty available at this time of year and Identifying and gathering berries, herbs, roots and seeds.

We will share a hearty foraged lunch on the farm and then make a preserve to take home in the afternoon,

Hafod Estate, Ystwyth Valley, Ceredigion (about 12 miles from Aberystwyth) 

 

 

Spring is a time of abundance and new life. Of fresh, green leaves, edible blooms and the most tender, tasty and nutritious wild food. Join me in this very special opportunity to spend a whole day foraging in the heart of the beautiful, magical, Hafod estate . We will explore woodland and meadows, next to waterfalls, along meandering paths and streams.

We will be identifying and gathering wild food and using it to prepare lunch. There will be lots of making, eating and walking. We will be based around a very wonderful small holding located in a sunny, sheltered spot in the estate. If the weather is fine we will eat outside but if not we can shelter and be warm inside.

Food will all be plant based. Refreshments, lunch and a bottle of something foraged to take home will all be included.

Join me for an Autumnal foray to gather a selection of wild bounty to turn into delicious seasonal preserves. You will start the day with a walk from Small World Theatre around the hedgerows to forage for berries and fruits then take them back to the kitchen to turn them into delicious wild berry syrup and spicy hawthorn ketchup.

Recipes and materials are included and you will have a bottle of each to take home with you.

Day in the Woods, Nanternis, nr New Quay
Friday 28th August 2015

A full day foraging. Starting the day in my 23 acre woodland, gathering the wild edible plants which grow beneath the tree canopy and exploring surrounding meadows and hedgerow. We will cook a communal, wild lunch in the rustic woodland kitchen, around a camp fire and end the day on Cwm Tydu beach at low tide, looking at coastal plants and seaweeds.

We will be looking at a variety of different plants and discuss their uses for vitality and health, sustainable harvesting and the wide selection which is available at this time of year.

A workshop in collaboration with expert brewer and artist Jacob Whittaker

Participants will collect and prepare ingredients for brewing elderberry wine, learn about
different methods and various wild fruits used in Country wines. The
second workshop a few months later will be a session of picking
fruits, finishing off with some wine tasting! There will be the option
of coming back later in the year to collect a bottle of elderberry wine

beautiful Pembrokeshire national park.

prepare a delicious wild lunch. The afternoon will be spent on the beach
discovering the seasonal delights the coast has to offer, focusing on

We explored the wild seasonal foods which can be found on this very special reserve. Focusing on edible greens & gathering to make a wild green pesto.

Taking a slow walk up Constitution Hill to Clarach Bay at low tide we will be looking at a variety of wild foods which grow close to the sea, focusing on many of the delicious seaweeds this part of the country has to offer. 
Foraging as we go, the walk includes lots of delicious tasters and refreshments.




Wednesday 29th May 1pm - 5pm

A collaboration with the wonderful Beach Hut in Llangrannog. Meeting at the main car park on the edge of Llangrannog, we will take a gentle stroll around the beautiful surrounding area, taking in a variety of different habitats - meadow, woodland, hedgerow and coast. We will be gathering a selection of the tastiest seasonal wild food, focusing on Spring salads, which we will take back to the beach hut to accompany a delicious late lunch.

Make unique Valentines Day treats for yourself and your loved ones. You'll be using many ingredients previously foraged by me (both fresh and from the store cupboard) and be introduced to a variety of new skills. This charming workshop uses delicious recipes inspired by a love of local wild food. These treats have to be tasted to be believed!
